EASY Hard Boiled Eggs in the Oven

I have been wanting to make hard boiled eggs for a while, but I really hate boiling them because half of them crack during the process, you have to clean the pot afterwards and there is still a chance they didn't turn out right...

So when Zack insisted on egg salad sandwiches this week I thought I would try out the oven method.

  1. Preheat the oven to 325 degrees 
  2. Place as many eggs as you want in your muffin tray 
  3. Put the muffin tray with the eggs in the preheated oven & set timer for 30 minutes
  4. After 30 minutes, place eggs in ice cold water (I let mine sit for about 20 minutes while I did laundry)
  5. Peel and enjoy!!!
* Depending on your oven the cook times may vary, but 30 min. worked perfectly for me*

These hard boiled eggs can be used to make deviled eggs, egg salad sandwich, or just a quick snack and are PERFECT and READY right after soaking:)


Soak the eggs in ice cold water...even just cold water worked for me...I just kept some cold water running on them for the first five minutes while the temperatures equilibrated


Came right off in one peel! No messy pieces of egg shell everywhere!

I hope this helps simplify the messy process of making hard boiled eggs and maybe even saves you the frustration of trying to crack them open!!!

Meals From This Past Week and What We Did Saturday!

This week was another long week! Did it feel long to you guys too? I don't know, maybe it's just me and having nights as late as 1:30 and waking up at 5:30 the next morning throughout the week. For some reason it just felt long.

Well this week included a lot of cooking, but I will just include a few of the meals I made this week.


Below are just a few of the recipes I made this week and a picture of my day yesterday and what I spent my Saturday doing!


Homemade Gluten Free Chicken Fried Rice



I cooked the cut up chicken breast in a small amount of coconut oil, salt, and peppered the chicken.


Add the boiled rice to the pan that had the chicken in it and pour desired amount of gluten free soy sauce on top of the rice.


Mix it all together!


I added two eggs to one edge of the pan....


Whisk the eggs and let them cook on the edge of the pan.


Mix in the cooked eggs with the combined rice and chicken.



Add the steamed veggies to the pan!


There you have it! Quick and easy meal, throw it all together, add as much soy sauce as you like and serve! 

Moving on to the next meal we had this week, it was more of a dessert that I made during the week because I saved our bananas that were too ripe to eat!

Gluten Free Banana Bread, 1 Plain Loaf and 1 Chocolate Chip Loaf!


As you can see I had already cut into the chocolate chip loaf one and ate it with Zack before I had taken this picture.


This is what the plain loaf turned out like.

Overall, with preparation the recipe took under and hour, the cook time in the oven was obviously the longest part! That and waiting for it to cool of course ;)!

A Quick Dinner We Threw Together: Rice, Balsamic Sautéed Chicken, and Parmesan Asparagus 



So that is how our quick dinner turned out, it was super yummy and it was full of asparagus, that was definitely the largest food group on our plates, VEGGIES!


If anyone is curious about the actual recipes and their cook times and the exact ingredients I used just let me know in the comments and I can type the up really quickly, no problem:)!

Everything I made here did not take much time at all, because I had such a busy week at school and did not have time to really prepare many big meals. So I thought I would just let you take a peak at a few meals we came up with on the spot this week!

Yesterday
Yesterday Zack and I drove home to San Clemente to watch my little brother play in his soccer game. He scored two goals and his team won! I felt bad for those little guys out there though, it was so warm, it was in the high 80's and you could just see they were exhausted and thirsty the whole time!


Here is a picture I posted on my instagram (SydneySedillo) yesterday of Oak and I watching my brother play! Luckily I found some shade or else the poor pup would've been miserable in the heat!

Quick,10 Minute Gluten-Free Chicken Bowl Dinner!

1. No food in the house
2. Need to go grocery shopping
3. School
4. Four exams this week


These four things combined were the precursors to tonights lazy meal....

Oh, and Zack decided to go get the extremely healthy Arby's, yeah, we're having a healthy Monday evening if you couldn't tell. Although, this doesn't really matter because we are very healthy eaters as it is and both extremely active...so screw it, tonight we didn't eat the healthiest!

So here is what I did for my quick, grocery-less meal.

  • Boil water and put the bagged rice into the water and boil for ten minutes
  • While rice is boiling add cut-up chicken breast to skillet pan with unflavored coconut oil (better than using butter in my opinion)
  • Add soy-sauce (for me it's gluten free soy sauce-but you can add whichever you have around) to chicken in pan and let simmer on low while the rice is boiling
  • While both rice and chicken are cooking, cut up some green onions!
  • Pepper the chicken (probably don't need to salt if you used the soy sauce-I didn't salt)
  • Once rice is done boiling, strain the bag, add single serving (or however many servings) to a bowl
  • Place the cooked chicken on top of the rice and sprinkle the green onions on top!
  • Woo! Done in 10 minutes!



This meal is too boring for me just like this and I love my food spicy so I love to add Sriracha Hot Sauce to it and make it kind of like a spicy chicken bowl!


You can get this at any grocery in the culture/speciality aisles usually


Put as much on as you like! I added even more after I took a few bites!

This is what my dinner looked like tonight, this is me improvising without wanting to spend longer than 10 minutes on dinner when I am busy with other things.

Unlike my husband, I do not have the luxury of running out for a quick bite or fast food (not that I really want to) having Celiac Disease, so this is kind of my fast-food alternative this Monday!

Quick & Easy Gluten Free Enchiladas, Lazy Friday Night!

QUICK GLUTEN FREE ENCHILADAS


Tonight we made enchiladas for dinner. Not our typical enchiladas, we normally like to make our own tomato sauce with jalapeno and habenero chiles, blend it in the vitamix add some rice flour, chicken stock etc., but I will save that recipe for another time! For now, it's just the quick and easy way because we had a long day at school and wanted to relax.

Ingredients:
McCormick Enchilada Sauce Seasoning Mix
8 oz. can tomato sauce
corn tortillas
shredded cheese
salt, pepper, garlic powder, onion powder, etc.
chicken breasts 

So, the McCormick seasoning package suggests you use beef, but we had chicken and so I just boiled and shredded the chicken. I followed the instructions on the seasoning pack...threw the chicken in with the sauce, added some cheese into the tortilla, poured the rest of the sauce on top with cheese, plopped it in the oven and there ya go...


The enchiladas are by no means pretty to look at, but it was a lazy night for us and we wanted to take a break from cooking something that would take longer

Not what our enchiladas typically look like before heading into the oven, but the quick way will have to do for tonight!


Add some avocado, green onions, and cilantro to make guacamole....


Smash it all up! :)
